Recipe of the Week
Cranberry-Mango Salsa
1 cup finely chopped cranberries
1 cup chopped mango
1/4 cup minced red onion
2 tbsp. chopped fresh cilantro
1 1/2 tsp. honey
1 tsp. minced, seeded jalapeno
1/4 tsp. salt
Instructions
1) Combine all ingredients and serve with tortilla chips.

Lemon Basil Shrimp & Pasta
3 quarts water
8 ounces uncooked spaghetti
1 lb. cleaned large shrimp
1/4 cup chopped fresh basil
3 tbsp. capers
2 tbsp. olive oil
2 tbsp. lemon juice
1/2 tsp. salt
Instructions
1) Bring water to a boil.
2) Add pasta; cook 8 minutes. Add shrimp to pasta; cook 3 minutes. Drain.
3) Put pasta and shrimp back in pot and add remaining ingredients. Toss and serve.

Sausage & Broccoli Calzones
1 lb. Italian sausage
1 pizza dough
3 cups shredded mozzarella
2 cups chopped broccoli
Instructions
1) Preheat oven to 425
2) Grill or broil sausage and slice.
3) Divide pizza dough into four equal portions. Shape each portion into an 8-inch round circle.
4) Top half of each circle with 1 oz. sausage, 1/2 cup broccoli, 1 1/2 cup mozzarella
5) Fold dough over and seal closed
6) Place calzones on baking sheet and brush with olive oil.
7) Bake 25-30 minutes and golden

Fudgy Brownies
1 cup flour
1/2 cup unsweetened cocoa
1/4 tsp. salt
1/3 c. butter
2 ounces dark chocolate, chopped
1 cup sugar
1/4 cup milk
1 tsp. vanilla extract
2 egg yolks
1 egg
Cooking spray
Instructions
1) Preheat oven to 350
2) Combine flour, cocoa, and salt. Stir with a whisk.
3) Place butter and chocolate in a microwave-safe bowl and microwave on high for 45 seconds, stirring every 15 seconds. Stir until smooth and set aside. Cool slightly.
4) Add sugar, milk, vanilla extract, egg yolks, and egg. Stir with a whisk to combine.
5) Add butter mixture to flour mixture, stirring until just combined. Pour batter into 8″ square baking pan coated with cooking spray.
6) Bake at 350 for 25 minutes
